The sun is shining here in the Creuse and it is lovely to see the vegetable patch coming to life - with courgettes flowering and the chard seeming to grow an extra foot a day!  This is the first year of my little vegetable patch here at De Tout Coeur Limousin and it is exciting to go out every day and check what is ready to pick. The herbs are growing in abundance, a little lemon verbena shoot I planted just a few weeks ago has sprung into life and produced a large shrub. The mint, as always, is taking over the garden, not a thing I mind however as I love to add it to my cooking and recipes. From a delicious addition to salads to fresh mint teas. It seems to grow back almost as quickly as I pick it.

A refreshing cooler for summer days - my simple recipe for Earl Grey, lemon verbena and mint syrup is a real showcase for the fresh herbs in season at the moment. It can be added to still or sparkling water to make a refreshing iced tea, or add a dash or 2 to a summer cocktail or non-alcoholic drink. An equally good addition to a gin and tonic or a glass of lemonade for apero o' clock. 

Watch this space for more seasonal recipes using our homegrown produce. I have a feeling there may be one or two for courgettes coming up!

Earl Grey, Lemon Verbena & Mint Syrup 


preparation/cooking time: less than 30 minutes 
recipe by Ema at De Tout Coeur Limousin

ingredients:
1 cup sugar
2 cups water
3/4 cup chopped fresh mint
3/4 cup chopped lemon verbena
3 Earl Grey tea bags or 6 tsps loose leaf tea
zest and juice of 1 lemon

method: 


add the Earl Grey tea bags/loose tea to 2 cups of just boiled water, stir and brew for 5 minutes. Remove the tea bags/tea leaves and strain through a sieve into a saucepan.


add the sugar, chopped mint and lemon verbena and lemon zest and bring to the boil. Simmer for 10 minutes. Remove from the heat and add the lemon juice.


leave to cool completely before straining and storing in an airtight bottle in the fridge. Dilute to taste.

  2. Like Stephanie, I have plenty of lemon verbena, which seeds itself freely around the garden, but no mint. If you think it would work, then I'll give it a try. I made some elderflower cordial a few years ago, which turned out rather well.
